TOMATO SOUP

INGREDIENTS:

  • 2 Tablespoons of butter
  • 2 Bay leaves
  • 1/2 teaspoon of chopped garlic
  • 1 Chopped onion
  • 6-7 Medium sized tomatoes
  • Salt
  • 1 teaspoon of Sugar
  • 2 Tablespoons of heavy cream
  • Coriander leaves
  • Bread croutons

INSTRUCTIONS:

1.Add 2 tablespoons of butter in a pot on low-medium flame.

2.Now add 2 bay leaves.

3.Add 1/2 teaspoon of garlic and chopped onions in the pan and stir.

4.Saute and stir until the onions becomes translucent.

5.Add freshly chopped tomatoes and salt.

6.Mix well and cover and cook for 10 mins.

7.Stir occasionally and splash some water.

8.After tomatoes have softened remove the heat and let it cool.

9.Take out the bay leaves.

10.Add the mixture into the blender and blend.

11.Use a strainer to strain the puree.

12.Now add the puree into the pot and add 1 cup of water.

13.Add 1 tablespoon of sugar.

14.Mix the soup very well and simmer on low heat until the soup becomes hot.

15.Season with freshly crushed pepper ,coriander leaves. add heavy cream and bread croutons and serve it hot.
